Description
Artichokes in green sauce with a trick to prevent oxidation.
Ingredients
Scale
- 4 fresh artichokes
- 1 lemon
- 100 ml of olive oil
- 2 cloves of garlic
- 1 bunch of fresh parsley
- Salt to taste
- Pepper to taste
- 50 ml of white wine
Instructions
- Start by cleaning the artichokes, removing the outer leaves and cutting the tips.
- Fill a bowl with water and squeeze the juice of the lemon inside to prevent the artichokes from oxidizing. Place the artichokes in this lemon water.
- In a pot of boiling water, add some salt and the artichokes. Cook for about 10 minutes.
- While the artichokes are cooking, finely chop the garlic and parsley.
- In a pan, heat the olive oil over medium heat. Add the chopped garlic and sauté until golden.
- Add the cooked and drained artichokes to the pan. Cook for 5 minutes, gently moving them.
- Add the white wine to the pan and let the alcohol evaporate for about 2 minutes.
- Incorporate the chopped parsley and season with salt and pepper to taste. Stir everything to mix well.
- Cook on low heat for another 5 minutes so that the artichokes absorb the flavor of the green sauce.
- Serve hot as a side dish or as a main course.
Notes
- The trick to prevent oxidation ensures that the artichokes will maintain their fresh color and flavor.
