Description

Baked zucchini sticks are a delicious and healthy snack or side dish made from fresh zucchini, coated with breadcrumbs and parmesan cheese, then baked until golden and crispy.


Ingredients

Scale
  • 2 medium zucchinis
  • 1 cup of breadcrumbs
  • 1/2 cup of grated parmesan cheese
  • 2 eggs
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat the oven to 200 degrees Celsius.
  2. Wash the zucchinis and cut them into sticks about 1 cm thick.
  3. In a bowl, beat the eggs and add a pinch of salt and pepper.
  4. In another bowl, mix the breadcrumbs with the grated parmesan.
  5. Dip each zucchini stick in the beaten egg and then coat them with the breadcrumb mixture.
  6. Place the sticks on a baking tray greased with a little olive oil.
  7. Spray the sticks with a bit more olive oil on top.
  8. Bake for about 20-25 minutes or until golden and crispy.
  9. Remove from the oven and let cool for a couple of minutes before serving.

Notes

  • For a spicier version, add crushed red pepper flakes to the breadcrumb mixture.
  • Serve with a dipping sauce of your choice, such as marinara or ranch.
  • These can be made ahead of time and reheated in the oven for a few minutes to crisp them up again.
