- 1 pork tenderloin (approximately 1 kg)
- 150 g Roquefort cheese
- 200 ml heavy cream
- Salt to taste
- Black pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 180°C.
- Season the pork tenderloin with salt and pepper to taste.
- In a large skillet, heat the olive oil over medium-high heat.
- Sear the pork tenderloin in the skillet for about 5 minutes, turning to brown all sides.
- Remove the pork tenderloin from the skillet and set aside.
- In the same skillet, add the crumbled Roquefort cheese and the heavy cream. Stir well until the cheese melts and the mixture is smooth.
- Place the pork tenderloin in a baking dish and pour the Roquefort sauce over it.
- Bake for 25-30 minutes, or until the meat is cooked through and tender.
- Remove from the oven and let rest for a few minutes before slicing into medallions.
- Serve hot, accompanied by the remaining sauce.

- This dish pairs well with roasted vegetables or mashed potatoes.
- For a lower calorie option, you can substitute the heavy cream with a lighter alternative.
