Description

Baked zucchini meatballs that are healthy and easy to make.

Ingredients

Scale
  • 2 medium zucchinis
  • 1 cup breadcrumbs
  • 1 egg
  • 1 clove of garlic, minced
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Olive oil to taste
  • Chopped fresh parsley (optional)

Instructions

  1. Preheat the oven to 200 degrees Celsius.
  2. Wash the zucchinis and finely grate them. Place in a colander and sprinkle with salt. Let sit for 10 minutes to release excess water.
  3. Rinse the zucchinis with cold water and press with your hands to remove any remaining water.
  4. In a large bowl, mix the grated zucchinis with breadcrumbs, egg, minced garlic, Parmesan cheese, salt, and pepper. Mix until you have a homogeneous dough.
  5. Form balls with the mixture, to your preferred size.
  6. Place the meatballs on a baking tray previously greased with olive oil.
  7. Bake in the oven for 20-25 minutes or until golden brown and firm to the touch.
  8. Serve hot and sprinkle with chopped fresh parsley if desired.

Notes

  • Adjust the size of the meatballs based on preference.
  • Ensure to press the zucchinis well to avoid excess moisture which can affect cooking.
