  • Total Time: 50
  • Yield: 4 servings 1x
  • Diet: Low Fat

Description

Delicious Mexican Tacos Al Pastor made with marinated pork and fresh pineapple.

Ingredients

Scale
  • 500 g of pork (loin or leg)
  • 100 g of fresh pineapple
  • 2 guajillo chiles
  • 2 cloves of garlic
  • 1 tablespoon of cumin
  • 1 tablespoon of oregano
  • Salt and pepper to taste
  • Corn tortillas
  • Chopped cilantro for garnish
  • Chopped onion for serving

Instructions

  1. Hydrate the guajillo chiles in hot water for 10 minutes, then drain and remove the seeds.
  2. In a blender, add the hydrated chiles, garlic cloves, cumin, oregano, salt, and pepper. Blend until a smooth paste is formed.
  3. Cut the pork into thin slices and marinate it with the chile paste for at least 2 hours (preferably overnight in the refrigerator).
  4. Heat a large skillet over medium heat and cook the marinated pork until well cooked and browned (about 15-20 minutes).
  5. Add the fresh pineapple in pieces and cook for a few more minutes until cooked and caramelized.
  6. Heat the corn tortillas in another skillet, and place some of the pork with pineapple on each tortilla.
  7. Garnish with chopped cilantro and onion to taste, and serve hot.

Notes

  • Marinating overnight improves the flavor.
  • Adjust spiciness by adding more or fewer chiles.
