Ingredients
Scale
- 1 lamb shoulder (approximately 2 kg)
- 4 cloves of garlic
- 2 sprigs of fresh rosemary
- 200 ml of olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 180°C.
- In a mortar, crush the garlic cloves with a bit of salt until you get a paste.
- Add the chopped fresh rosemary and the olive oil to the garlic paste, mixing well.
- Make cuts in the skin of the lamb shoulder so that the marinade penetrates well.
- Rub the garlic and rosemary mixture all over the lamb shoulder, making sure to cover it well.
- Place the lamb shoulder in a baking tray and add a little water to the bottom.
- Cover the tray with aluminum foil and bake for 1 hour.
- After an hour, remove the aluminum foil to brown the skin.
- Bake for an additional 30 minutes, basting the lamb shoulder with its own juices every 10 minutes.
- Once browned and cooked, remove from the oven and let it rest for 10 minutes before slicing.
Notes
- Ensure the lamb is at room temperature before cooking for even cooking.
- Letting the meat rest allows the juices to redistribute for better flavor.
