Description
Spicy grilled chicken with avocado salad and garlic rice.
Ingredients
Scale
- 4 chicken breasts
- 2 tablespoons olive oil
- 2 tablespoons hot chili sauce
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 cup rice
- 2 cups water
- 1 avocado
- 1 large tomato
- Juice of 1 lemon
- 1/4 red onion
- Fresh cilantro to taste
Instructions
- In a large bowl, mix olive oil, hot chili sauce, garlic powder, salt, and pepper. Add the chicken breasts and marinate for at least 30 minutes.
- While the chicken is marinating, prepare the rice. In a pot, bring water to a boil, add the rice, salt, and reduce heat. Simmer for 18-20 minutes or until the water has been absorbed and the rice is tender.
- While the rice is cooking, dice the avocado and tomato, and finely chop the red onion and cilantro. Mix all the ingredients in a bowl and squeeze lemon juice on top. Set aside.
- Preheat the grill to medium-high heat. Cook the chicken breasts for 6-7 minutes on each side, or until fully cooked and golden brown.
- Once the chicken is done, remove it from the grill and let it rest for a couple of minutes before slicing it into strips.
- Serve the chicken hot over a bed of garlic rice and accompany with the avocado salad on the side.
Notes
- For a spicier flavor, increase the amount of hot chili sauce.
- You can substitute chicken breasts with chicken thighs if preferred.
- Fresh herbs can be added to the salad for extra flavor.
