- 2 cloves garlic, finely chopped
- 1 small onion, chopped
- 2 tablespoons vegetable oil
- 1 teaspoon ground cumin
- 1 teaspoon Mexican oregano
- 1 teaspoon chili powder (optional for spiciness)
- 1 bay leaf
- Salt and pepper to taste
- 12 corn tortillas
- Oil for frying (or can bake them)
- 2 cups lettuce, finely sliced
- 1 cup tomatoes, chopped
- 1/2 red onion, finely chopped
- 1 avocado, sliced
- 1/2 cup crumbled fresh cheese
- 1/4 cup Mexican crema
- Green or red salsa to taste
- Fresh cilantro, chopped
- Limes, cut into wedges
Instructions
- Cut the chicken breast into small pieces.
- In a large skillet, heat the oil over medium-high heat.
- Add the chopped onion and sauté for 2 minutes until translucent.
- Add the garlic and cook for another 30 seconds until it releases its aroma.
- Add the chicken and cook for 5-7 minutes, stirring occasionally.
- Season with cumin, oregano, chili powder, bay leaf, salt, and pepper.
- Reduce the heat and cook for another 10 minutes, until the chicken is fully cooked and slightly browned.
- Remove the bay leaf and shred the chicken with two forks.
- Fried Option: Heat enough oil in a pan. Dip each tortilla for 20-30 seconds until golden and crispy. Drain on paper towels.
- Baked Option: Preheat the oven to 180°C. Place the tortillas on a baking sheet and bake for 10 minutes, flipping halfway, until crispy.
- On each tostada, place a layer of sliced lettuce.
- Add a generous portion of shredded chicken.
- Top with tomatoes, red onion, and avocado slices.
- Sprinkle crumbled fresh cheese on top.
- Finish with a dollop of Mexican crema, salsa to taste, and fresh cilantro.
- Serve immediately with lime wedges to squeeze as you enjoy.

- For juicier chicken: Marinate it for 30 minutes in lime juice, garlic, and salt before cooking.
- Perfect tostadas: If baking, brush them lightly with oil before baking to achieve even golden color.
- Control spiciness: Adjust the amount of chili based on your preference. You can omit it completely if making for children.
- Prep ahead: The chicken can be cooked beforehand and reheated when serving, saving time.
